The Beekeeper’s Pork Loin


  • 3 lb Pork Loin
  • 8 slices Bacon
  • 2 Tbsp Double Barrel Honey
  • 2 Tbsp Balsamic Vinegar
  • 2 Tbsp Red Wine Vinegar
  • 1 Onion (Preferably Sweet) (minced)
  • 1 Tbsp Dried Rosemary
  • 2 Tbsp Golden Raisins (optional)


  1. Preheat oven to 375º.

  2. Season pork with salt and pepper.

  3. Wrap the bacon slices around the pork loin and secure with tooth picks.

  4. Preheat large skillet over medium-high heat and brown pork loin on all sides until golden brown. Approximately 10 minutes.

  5. Place in roasting pan.

  6. Combine Double Barrel Honey, Balsamic Vinegar, Red Wine Vinegar, Onion and Rosemary in a small bowl. Spread over Pork Loin.

  7. Roast the Pork Loin in preheated oven for 15 minutes. Sprinkle with raisins.

  8. Continue roasting until the internal temperature reaches 145 degrees. Approximately 15 additional minutes.

  9. Remove from oven and allow to rest for 5 minutes. Remove toothpicks.

  10. Slice and enjoy!
