INGREDIENTS:
- 2 ripe peaches
- 2 tablespoons unsalted butter, softened
- 2 tablespoons Double Barrel Honey
- 1 tablespoon bourbon (optional)
- Fresh mint sprigs, for garnish (optional)
- Vanilla ice cream or whipped cream, for serving (optional)
INSTRUCTIONS:
- Prepare the grill: Preheat your grill to medium-high heat. If you don't have a grill, you can preheat a grill pan on your stovetop over medium heat.
- Prepare the peaches: Wash the peaches and pat them dry. Cut the peaches in half and remove the pit.
- Make the Double Barrel Honey butter: In a small bowl, cream together the softened butter and Double Barrel Honey until well combined. If using, stir in a tablespoon of bourbon.
- Grill the peaches: Place the peaches, cut side down, on the preheated grill. Grill for 3-4 minutes per side, or until they are softened and have nice grill marks.
- Assemble and serve: Once the peaches are grilled, remove them from the heat and brush generously with the Double Barrel Honey butter.
- Serve immediately: Transfer the grilled peaches to a plate and garnish with fresh mint sprigs, if desired. Serve warm with a scoop of vanilla ice cream or whipped cream for an extra decadent treat.
TIPS:
- For a smokier flavor, you can leave the pit in the peaches while grilling. Just be sure to remove it before serving.
- If the butter starts to melt too quickly on the grill, brush the peaches with it just before serving.
- You can experiment with different types of bourbon to find one that you like best with the peaches.
