Vanilla ice cream or whipped cream, for serving (optional)
INSTRUCTIONS:
Prepare the grill: Preheat your grill to medium-high heat. If you don't have a grill, you can preheat a grill pan on your stovetop over medium heat.
Prepare the peaches: Wash the peaches and pat them dry. Cut the peaches in half and remove the pit.
Make the Double Barrel Honey butter: In a small bowl, cream together the softened butter and Double Barrel Honey until well combined. If using, stir in a tablespoon of bourbon.
Grill the peaches: Place the peaches, cut side down, on the preheated grill. Grill for 3-4 minutes per side, or until they are softened and have nice grill marks.
Assemble and serve: Once the peaches are grilled, remove them from the heat and brush generously with the Double Barrel Honey butter.
Serve immediately: Transfer the grilled peaches to a plate and garnish with fresh mint sprigs, if desired. Serve warm with a scoop of vanilla ice cream or whipped cream for an extra decadent treat.
TIPS:
For a smokier flavor, you can leave the pit in the peaches while grilling. Just be sure to remove it before serving.
If the butter starts to melt too quickly on the grill, brush the peaches with it just before serving.
You can experiment with different types of bourbon to find one that you like best with the peaches.
This recipe can easily be doubled or tripled to serve a crowd.
