3 lb Pork Loin

8 slices Bacon

2 Tbsp Double Barrel Honey

2 Tbsp Balsamic Vinegar

2 Tbsp Red Wine Vinegar

1 Onion (Preferably Sweet) (minced)

1 Tbsp Dried Rosemary

2 Tbsp Golden Raisins (optional)
INSTRUCTIONS
- Preheat oven to 375º.
- Season pork with salt and pepper.
- Wrap the bacon slices around the pork loin and secure with tooth picks.

Preheat large skillet over medium-high heat and brown pork loin on all sides until golden brown. Approximately 10 minutes.
- Place in roasting pan.
- Combine Double Barrel Honey, Balsamic Vinegar, Red Wine Vinegar, Onion and Rosemary in a small bowl. Spread over Pork Loin.
- Roast the Pork Loin in preheated oven for 15 minutes. Sprinkle with raisins.
- Continue roasting until the internal temperature reaches 145 degrees. Approximately 15 additional minutes.
- Remove from oven and allow to rest for 5 minutes. Remove toothpicks.
- Slice and enjoy!
