Bourbon Honey Pumpkin Bread

INGREDIENTS

FOR THE BREAD:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt   
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/4 cup Double Barrel Honey
  • 1/4 cup bourbon (optional)

FOR THE GLAZE:

  • 1/4 cup powdered sugar
  • 1 tablespoon Double Barrel Honey
  • 1 tablespoon milk

      INSTRUCTIONS

      1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

      2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, cinnamon, ginger, cloves, and salt.

      3. In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, pumpkin puree, Double Barrel Honey, and bourbon (if using).

      4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

      5. Pour the batter into the prepared loaf pan.

      6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

      7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

      8. To make the glaze, whisk together the powdered sugar, Double Barrel Honey, and milk until smooth. Drizzle over the cooled bread.

      9. Serve and enjoy!
