This recipe takes your grilled pineapple to a whole new level! The smoky sweetness of Double Barrel Honey and a touch of rum create a warm and boozy glaze that perfectly complements the juicy sweetness of the pineapple.

INGREDIENTS

  • 1 ripe pineapple
  • 1/4 cup brown sugar, packed
  • 1/4 cup dark rum (optional, for a stronger rum flavor use amber rum)
  • 2 tablespoons Double Barrel Honey
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon ground cinnamon (optional)
  • Pinch of freshly grated nutmeg (optional)
  • Skewers (optional)

    INSTRUCTIONS

    1. Prepare the pineapple: Cut the top and bottom off the pineapple. Stand it upright and cut away the rind, following the curve of the fruit. Discard the rind and cut the pineapple into 1/2-inch thick slices. You can also cut the pineapple into rings or wedges, depending on your preference.

    2. Preheat the grill: Preheat your grill to medium-high heat (around 400°F). If you don't have a grill, you can also use a grill pan on your stovetop.

    3. Grill the pineapple: If using skewers, thread the pineapple slices onto them. Place the pineapple slices (or skewers) on the preheated grill and cook for 2-3 minutes per side, or until they are slightly charred and softened.

    4. Make the glaze: While the pineapple is grilling, combine the brown sugar, rum (if using), Double Barrel Honey, lime juice, cinnamon (if using), and nutmeg (if using) in a small saucepan. Heat over medium heat, stirring occasionally, until the sugar dissolves and the glaze thickens slightly. This should take about 5-7 minutes.

    5. Serve: Brush the warm glaze over the grilled pineapple slices and serve immediately. You can enjoy them as is, or top them with a dollop of whipped cream or vanilla ice cream for an extra decadent treat.

    TIPS:

    • For a smoky flavor, you can add a few wood chips to your grill while cooking the pineapple.
